Beef and Broccoli
Week night meals that take less than 30 minutes, nutrient dense (this is high in protein and fiber!) and taste delicious are everything to me. I love how cruciferous veggies like broccoli fill me up and I always combine cauliflower rice with jasmine rice to make a big fluffy rice scoop underneath the good stuff. This will definitely be added to my fall meal rotation - keep reading for the how to!
Ingredients:
2 cups broccoli small chopped
1 tsp garlic powder
1 lb ground beef (grass fed and finished if possible)
1 tbsp peeled and minced ginger
1 tbsp minced garlic
3 tbsp hoisin sauce
2 tbsp tamari
1 tbsp rice vinegar
1 tsp maple syrup
1 tbsp avocado oil
Salt and pepper
Jasmine rice and/or cauliflower rice to serve
Sesame sesame seeds and green onions to garnish
Method:
Preheat your oven to 400 degrees farenheit. Small dice the broccoli and toss them with 1 tbsp avocado oil and season with garlic powder, salt and pepper on a baking sheet. Set a timer for 25 minutes.
Optional step, before you start the beef - make a pot of rice and/or thow a bag of frozen cauliflower rice on a pan and heat it up in the oven with the broccoli. I love mixing one cup of cooked rice with one bag of cooked cauliflower rice for the perfect combo of texture, fiber and nutrients!
Make the sauce for the beef using the hoisin sauce, tamari, rice vinegar and maple syrup - mix it well and set to the side.
Place the ground beef in a heated skillet and season one side well with salt and pepper. While it browns, mince the garlic and ginger.
Once the beef is fully browned, add the ginger and garlic - stir until fragrant.
Add in the sauce and stir until the sauce slightly glistens and everything is mixed.
Plate your dish with your rice of choice, a healthy scoop of beef and broccoli. Garnish with sesame seeds and sliced green onion.
