Chocolate Chip Granola Bars

I whipped these up one Sunday afternoon for my son who didn’t seem to be liking any of our snack options. And frankly, I needed something sweet yet savory too. These are nutrient packed and very delicious. Cut them into squares and keep them on hand for a treat that sustains your energy and won’t spike your blood sugar.

Ingredients:

  • 1/2 cup honey

  • 1 tsp vanilla extract

  • 1 tbsp coconut oil, melted

  • 2 cups rolled oats (glyphosate free if possible, I love this brand)

  • 1 cup unsweetened coconut flakes

  • 1 tsp cinnamon

  • 1/2 tsp sea salt

  • 1/2 cup roughly chopped walnuts

  • 1/2 cup chocolate chips - I love these mini ones as they spread out more ;)

  • 1 tbsp ground flax seed

  • 1 tpsp chia seeds

  • 1 tbsp sunflower seeds (if you can find sprouted they will be even more nutritious!)

Method:

  • Preheat oven to 300 degrees.

  • Line a small baking sheet pan (9x13 inch) with parchment paper. Spray lightly with avocado oil or lightly grease with coconut oil.

  • Warm the honey, coconut oil, and vanilla in a small sauce pan. Once boiling, reduce and simmer for 5 minutes. Remove from the heat.

  • While the mixture slightly cools, place everything else except for the chocolate chips into a large mixing bowl. Stir it all together and then pour cooled liquid over and mix until the dry ingredients are completely covered by the wet.

  • Mix in chocolate chips last so they don’t melt.

  • Spread the granola mixture onto the pan evenly packing it lightly down.

  • Place in the oven for 20-25 minutes until it’s just golden in color. Keep an eye on them so they don’t get too brown and become hard.

  • Remove from heat and allow to cool completely. Cut into squares, enjoy, and store!
