Perfect Avocado Toast

Avocado toast,

will never get old. I still remember sitting in Little Collins on Lexington 12 years ago and falling in love. I still make it to this day and it has yet to disappoint me. This being said, there are definitely some ways to level up your toast not only with flavor but also nutrition. Keep reading for my fav combo!

Method:

  • Toast your bread.

  • Prepare your poached eggs.

  • Spread and mash 1/4 of an avocado on each slice until the toast is completely covered.

  • Sprinkle goat cheese, flakey sea salt and cracked red pepper over avocado toast.

  • Place your eggs on the toast and top with pickled red onions, more flakey sea salt and some fresh ground pepper.

  • Enjoy!

Ingredients:

  • 2 slices toasted bread. I love Knead Love Bakery or Simple Needs gluten free breads but do what works best for you!

  • 1/2 avocado scooped out of peel and sliced in half.

  • A pinch of cracked red pepper.

  • 2 poached eggs - if you’re unsure how to do this check out my “how to” here!

  • .5 ounces feta cheese - go for sheep or goat cheese if you can with no fillers.

  • Pickled red onions. I love keeping a jar of them in my fridge. I’d suggest this recipe.

  • Flakey sea salt and fresh ground pepper.


I hope you enjoy this toast as much as I do! It’s a quick and delicious one that I love to whip up on the weekends when I have the time to poach eggs and take my time with breakfast prep.
