Pickled Red Onions

Make everything better! These are so easy and are great to have in the fridge for any meal whether it’s breakfast tacos, avocado toast, veggie baked tacos, salads and more! They take less than 10 minutes to make and you’ll have them on hand for weeks, unless you eat them sooner! Keep reading for the details

Ingredients:

  • 2 small-medium red onions sliced thin on a mandolin

  • 1 cup apple cider vinegar

  • 1 cup water

  • 3 tbsp maple syrup

  • 3 tsp sea salt

  • 2 crushed garlic cloves

  • pinch of red pepper flakes or black peppercorns - pick the flavor profile you’re going for!

  • a large jar about 1 liter in size or 2 small jars

Method:

  • Place all of the ingredients in a small sauce pan and bring to a boil. Let them simmer for 2-3 minutes while the salt disolves

  • Meanwhile, thinly slice the red onions with a mandolin and crush the garlic cloves

  • Place the onions, garlic, and flavorings of your choice in a large jar or 2 small jars.

  • Pour the brine over and let it cool for an hour or until it’s at room temperature.

  • Store in the fridge for 2-3 weeks unless eaten sooner!
