Stone Ground Mustard Crusted Salmon
I’ve been eating this for years
and had gotten out of routine of making this and then last week my husband asked if I would and I remembered how good it is! This takes about 2 minutes to prep and then you throw it in the oven. Keep reading and be sure to save this for a quick weeknight dinner.
Ingredients:
- 2 filets of wild salmon (if possible). 
- 1/4 cup stone ground mustard 
- 2 tbsp finely chopped chives 
- 1 tbsp olive oil 
- salt and pepper 
Method:
- Preheat your oven to 400 degrees. 
- Line a baking sheet with a silpat and place salmon filets evenly apart and pat them dry. 
- In a liquid measuring cup, add the mustard, the chives, olive oil and a good pinch of salt and ground pepper. Mix well. 
- Evenly spread the mustard mixture between the two filets so they’re completely covered. 
- Place them in the oven and bake for 15-18 minutes or until cooked to your liking (I prefer medium). 
- Serve with roast veggies and enjoy!
