Viral 2 Ingredient Berry Cobbler

I LOVE dessert, especially with my family on the weekend.

I also don’t have a lot of time! I’ve caught variations of this viral berry cobbler on the internet so took a turn at it myself and I will say, it’s so good! I added a little lemon juice, vanilla and arrowroot powder (this will “thicken” it slightly making it more jammy aka yummy) but these aren’t necessary. Come summer, you can use all the fresh, local berries and not frozen! Keep reading for the easy how to.

Ingredients:

  • 5-7 cups frozen mixed berries

  • 1 package sugar cookies - I love Sweet Loren’s products because they’re made with good ingredients and are gluten free.

  • The next 3 ingredients I think make this a little better but aren’t necessary:

  • 1 tbsp lemon juice

  • 1 tbsp arrowroot powder

  • 1 tsp vanilla

  • Vanilla ice cream to serve - a must!

Method:

  • Preheat your oven to 400 degrees

  • In an 8×8 baking dish, mix the frozen berries, lemon juice, arrowroot powder and vanilla

  • Top off with the cookies

  • Bake for 30-35 minutes until the cookies are browned and baked

  • Take out the dish and let it cool for about 10 minutes

  • Serve with a healthy scoop of ice cream and enjoy!
