Buffalo Chicken Salad

I am OBSESSED with this salad!

I eat a salad for lunch most days. Not because “its healthy” but because its’s an easy way to get lots of nutrients, use what’s in my fridge and generally doesn’t take much time to put together.

Enter the Buffalo Chicken Salad….It’s so good and so easy. Make things simple and buy a few of the ingredients already chopped. I batch chicken every week so this plus the ingredients on hand are easy throw together in the morning. It in total takes not even 10 minutes and is full of flavor.

This serves one but multiply as needed! I prefer to make my salads for work (or whenever you’re having them!) fresh each morning.

Ingredients:

Salad:

  • mixed greens of choice (I prefer mixed greens for this one but make it easy on yourself and use what you have!)

  • 1/2 cup chopped grape tomaotes

  • 1/2 cup shredded carrots (buy pre shredded to make it easy for you!)

  • 1/2 cup chopped celery (buy pre shredded to make it easy for you!)

  • 1/2 avocado

  • 1 oz organic blue cheese

Chicken:

Dressing:

  • juice of 1-2 limes (about 2 tbsp)

  • 1 tbsp olive oil

  • salt and pepper to taste

Method:

  • chop and plate all salad ingredients into your favorite salad bowl/container

  • heat up the chopped/shredded chicken and buffalo sauce in a pan on low with a cover (this is key so you don’t burn the sauce). Alternatively if you are packing this for a work lunch, put the chicken/buffalo in a separate container so it doesn’t make the veggies soggy while you wait to eat it. If don’t have access to heat up the chicken pull everything out an hour before so you can eat it room temperature.

  • mix the olive oil, lime juice and salt/pepper together for the dressing

  • mix the salad and dressing together and top with buffalo chicken

  • enjoy the flavor bomb salad you’ve just made!!
