Butternut Squash, Coconut and Curry Soup

Soup Season is Here!

I love a good salad but when the weather turns cooler soup is a really nice pivot. It’s a great way to get in your veggies, fiber, eat seasonally, and give your digestion a bit of a break. I riffed this soup the other night and it came out great! You likely have a lot of the ingredients in your pantry already and the other things keep well in the fridge. Scroll down for the easy how to!

Ingredients:

2 tbsp avocado oil plus more

1 small white onion, diced

3 garlic cloves, minced

2 cups chopped butternut squash

1 bag frozen cauliflower rice

1 can coconut milk

2 tbsp red Thai curry

2 cups vegetable broth

sea salt and ground pepper

Method:

  1. Preheat your oven to 400 degrees and bring your frozen cauliflower out of the freezer to slightly defrost.

  2. If the butternut squash is not pre chopped (or is in very large chunks) chop it into around 1-inch cubes (rough cut is fine).

  3. Toss with 1 tbsp avocado oil and season well with sea salt and ground pepper.

  4. Arrange it well on a lined baking sheet and roast on the bottom rack for 30 minutes, tossing the squash halfway. It should be slightly browned and soft.

  5. Once you get that going, small dice the onion and garlic.

  6. In a dutch oven (if you have), heat 1 tbsp avocado oil. Once shimmering, add in the onions and saute until translucent.

  7. Add in the garlic and once fragrant, add in the cauliflower rice and sauté until soft.

  8. Season with ½ tsp sea salt and ground pepper and add in 2 tbsp red Thai curry. Mix well until the curry has blended in.

  9. Add in the can of coconut milk and 2 cups vegetable broth, bring to a rolling boil. Lower the heat and slightly cover until the squash is done roasting.

  10. Once the butternut squash is done roasting, take it out and blend the broth mixture in batches in a blender.

  11. Return it all to the dutch oven and taste for seasoning - add more salt and pepper as needed.

  12. Serve immediately or let it sit so the flavors can improve.

  13. Serve with chopped herbs like parsley or cilantro, flaky sea salt and a grind of fresh pepper.

  14. Enjoy!
