Kimchi Grilled Cheese
Who doesn’t love grilled cheese?
I don’t know if this is a thing in other countries, but if you were raised in America in the 80’s and 90’s you definitely ate grilled cheese as a kid. I have so many memories of piping hot tomato soup and the gooey-ness of a grilled cheese. It’s the perfect combo. Now that I’m a grown up I still love this combo but need a bit more nutrition to really fill my cup. I present you with, kimchi grilled cheese! This is the perfect combo of gooey cheese plus the tart deliciousness that is kimchi. Keep reading for the details!
This serves 1 person, double, triple, etc depending on how many people you’re serving!
Ingredients:
- 2 slices of bread 
- 2 oz sliced sharp cheddar cheese 
- 1/4 cup of loosely packed kimchi, roughly chopped 
- mayo - avocado oil based if possible 
- avocado oil 
- iron press if you have one 
Method:
- spread a thin layer of mayo on one side of each slice of bread 
- warm a pan and lightly spray avocado oil 
- once the oil is heated place each slice of bread mayo side down and layer cheese evenly on each slice 
- place a lid over it to help start melting the cheese 
- once it’s a bit melted, place the kimchi on one slice of bread and carefully flip the slice with only cheese over on top of it. 
- if you have a cast iron press (or another heavy bottom pan), place it on top of the sandwich to really press it and get it to all the melty goodness we love in a grilled cheese. 2-3 minute or so. 
- flip it and repeat for another 2-3 minutes so both sides are evening browned. 
- plate your sandwich, cut in half and enjoy! I love serving this with a roasted veggie soup.
