Nori Salmon Rice Wraps

This came out of what was going to be leftover salmon

And it turned out so good! Over the years I’ve watched endless food videos on social media. At some point I know things like this have come across my way. I had left over salmon the other night and it occurred to me that I have everything to make a nori rice wrap of sorts. I can’t wait to have leftover salmon again for another repeat of this kind of lunch! Keep reading for the scoop.

I packed everything in a few random containers to keep it all from getting mushy. One of them happened to be one of my son’s lunch boxes which worked out great for sectioning off the fillings.

I brought the whole package of nori wraps to work because they’re not only a great snack but also this way I have them on hand for the next time! Nori has a very high nutritional value, is unique in flavor and is delicious if you ask me.

Ingredients:

The below serves one but feel free to multiply for more people!

  • Nori Wraps - can be large or small. You’ll just need to adjust how you fill each one and how many you end up making

  • 1 cup prepared sushi rice, organic if you can

  • 1/2 avocado sliced or mashed (if packing this to go, save the pit to keep the avocado from going brown)

  • 1/2 cup shredded carrots

  • 1 thinly sliced green onion

  • 1 leftover piece of salmon - around 4-6 oz.

  • 1/3-1/2 cucumber sliced thin with a mandolin (one of my kitchen’s must have tools)

  • Rice vinegar to taste

  • 2 tbsp avocado oil mayo

  • 1 tsp sriracha

  • Flakey sea salt

Method:

  • Prepare everything above.

  • If packing this for lunch, place each item in their own container so they don’t get all mushy together (or use a bento box style container). I did put the shredded carrots and green onions in same container and it was fine.

  • Toss cucumbers with a few dashes of rice vinegar and a sprinkle of sea salt.

  • Mix avocado mayo and sriracha together.

  • When you’re ready to eat this, take a nori sheet and spread a row of rice along the length of it. Follow by the avocado, carrots, green onions, salmon, cucumbers and a thin spread of spicy mayo.

  • Roll up and slice in half and enjoy! This made 2 large roll ups for me plus extra cucumbers to eat on the side but this would make more if using the smaller nori sheets.


I hope you enjoy this as much as I did! I love it when random things from my kitchen come together and end up tasting so good. It feels like a double win and I truly believe it’s the small things like this that really make my days great.
