Green and White Breakfast Pizza

I love pizza

And when made at home will argue it as a healthy choice that’s reasonable meal for any time of the day. I whipped this up last weekend for breakfast and ended up eating the rest of it for lunch because it was that good. I’m a huge fan of Knead Love Bakery’s gluten free pizza dough but use whichever brand works for you! I love keeping a few lumps of dough in my freezer for whenever the craving calls.

Ingredients:

  • 1 ball of pizza dough defrosted if necessary

  • 2 broccoli crowns chopped into small pieces (for added health benefits, allow the chopped broccoli to sit for 20 minutes before preparing/cooking).

  • 1/2 cup ricotta

  • zest of 1 lemon

  • 3 cloves garlic minced

  • 4-6 eggs

  • honey (hot honey if you have it and want some spice - this is my favorite)

  • 1/2 cup chopped herbs - parsley, basil and mint would be a great combo but work with what you have!

  • Olive oil

  • Avocado oi

  • Salt and pepper

Method:

  • Preheat oven to 425 or whatever temperature pizza crust requires.

  • Toss chopped broccoli with 1 tbsp avocado oil and salt/pepper. Spread evenly on a baking sheet. Roast for 20 minutes until lightly browned, tossing half way through.

  • Once you’ve gotten broccoli going, prepare pizza crust as per instructions.

  • While the broccoli and crust is cooking, prepare ricotta with zest of lemon, 1 tbsp olive oil, minced garlic and salt/pepper.

  • Take crust out and evenly spread ricotta mixture all over it. Top with broccoli leaving spaces for eggs. Press little craters into the pizza and crack eggs into each one. Sprinkle salt and pepper.

  • Bake for about 10 minutes until the eggs are cooked to your preference.

  • While the pizza is finishing up, chop herbs and clean up kitchen.

  • Once pizza is done top with herbs, a drizzle of honey and a little flakey sea salt if you have .
