Pizza Bites
This has been a fun go to lately….
These are so fun and good! I’ve made them with my son a few times now and he loves putting them together. It turns meal time into an activity. I recently made a huge batch for a neighborhood party in Montauk and it was the perfect finger food. Because they’re so small, each one gets brown, warm and crusty - honestly, I think they’re perfect! Keep reading for the easy how to.
Ingredients:
pizza dough - enough for one “pizza” I will pick it up frozen from a local grocery store for my son or make it “grain free” using Stellar Eats (my son likes this one too! It’s a great way for him to get other nutrients in his diet!)
pizza sauce of your choice - I really like Rao’s
shredded mozzerella or 3 cheese italian - the shredded cheese turns out much better than the traditional mozzerella balls
other toppings of choice such as pepperoni, veggies, etc.
avocado oil for greasing the muffin tin
Tools you’ll need:
muffin tin for 12
Method:
preheat your oven to 400 or what the package of your pizza dough requires.
prepare your pizza dough and par bake (partially pre bake) if necessary (Stellar Eats requires this)
grease each muffin cup with the avocado oil
you’ll put about 2 heaping tablespoons of dough into each muffin tin. Pat it down well, you’ll know you have the right amount if it’s filled about half way to the top.
par bake if required by your dough’s recipe
spoon 1-2 tablespoons of sauce on top followed by about 2 tbsp of shredded cheese (or to your desired cheesy-ness) plus any other desired toppings
bake for 12-15 minutes - keeping an eye on your cheese so it browns but doesn’t burn.
take them out and let the mini pizzas cool for about 5 minutes. They will be easier to take out this way. Once ready, use a butter knife to loosen all around and pull each one out. Eat right away or let them cool a bit longer on a cooling rack.
Eat then or freeze for later!
