Stewed white beans, tomatoes and kale
This is the perfect solo meal
On the days where my son wants his go to of “noodles and tofu” and my husband isn’t around, this is one of my go to one pot single serving meals. I love this because likely you have a can of canellini beans in the pantry, a container of tomatoes waiting to be used and who doesn’t have kale these days in the fridge? This meal is full of fiber, protein, colorful veggies, fat, and flavor! I love an easy one pot meal for myself and I find that this is something we can all use sometimes. Keep reading for the how to!
Ingredients:
1 pint grape tomatoes halved
2-3 garlic cloves minced
1 can canellini beans rinsed
1 cup finely chopped kale (any kind works)
1 tbsp olive oil
1 lemon
salt and pepper to taste
a few slices of shaved pecorino romano or parmesean cheese
Method:
prep all of the ingredients be cause this comes together fast
heat a skillet or saute pan until warm and add the olive oil
once the oil has heated, add tomatoes with salt and pepper. Stir occasionally until softened, 3-5 minutes
add in garlic and stir until fragrant, about 30 seconds - careful to not let it brown
add in beans and stir until they start to warm - about 2 minutes
add in kale and stir until combined and the kale wilts - about 2-3 minutes
turn off heat and squeeze juice of 1 lemon and mix
plate the “stew” into a low bow, add a few slices of shaved pecorino romano plus some sea salt (flakey if you have it!) and ground pepper
