Summer in a Bowl Salad

Summer produce is here!

Eating seasonally is such a great way to mix things up, keep food interesting, and get new nutrients into your body. Summer is the best because of all the fruits - I LOVE a fruit in a salad (I’m not much of a fruit eater otherwise) so this is how I get them in. If you grow basil in the summer, you’re in luck because I throw it into the dressing for a real kick of flavor. Keep reading for the how to on this one.

This prepares 1 salad - if you’re going to make for more than 1 person double, triple, etc. the ingredients. I personally like to prepare my salads for work each morning as I find them to be most fresh this way!

Ingredients:

  • 2 cups butter lettuce

  • 1/2 cup sliced strawberries

  • 1/4 cup sliced cherry tomatoes

  • 1/2 sliced avocado

  • 1 sliced radish

  • 1 sliced cucumber

  • 1/4 cup sweet corn

  • 2tbsp pickled red onions

  • 1oz crumbled feta cheese

  • 4-6oz sliced chicken, salmon, or protein of choice

Basil Vinnaigrette:

  • 1/4 cup extra virgin olive oil

  • 1/4 cup apple cider vinnegar

  • 1tbsp dijon mustard

  • 1/4 cup basil leaves

  • 2 tbsp water

  • salt and pepper to taste

Method:

  • prepare/chop all ingredients for salad and plate them in a large salad bowl. I personally like to either place each ingredient next to the other OR sprinkle it all around - I mix it up!

  • place all of the dressing ingredients into a blender and mix completely. Store in an airtight bottle/jar for up to a week.
